Hellloooo my doves, my beautiful ones.  I am not a superstitious person in any way, but for most of my life, I have fallen into the habit of saying “Rabbits”, or “White Rabbits”, on the first day of the month, to bring luck. It has to be the first thing you say, and it has to be said out loud. Well guess what? I neglected to do it on March 1st, and just look what happened. I will NOT make that mistake tomorrow. Anyway, sorry about the pandemic.

 

Melissa writes to say she is in Day 18 of self isolation, although she’s not alone, as she has a new puppy and 2 teenage daughters, not to mention a witty husband. Melissa has a lingering cough, but no fever, and when she told her husband she felt like a leper, he told her wrong cat, she’s more of a cougar. Good one, Mister Melissa. Erika implores everyone to safely dispose of the plastic bags, latex gloves and masks they wear to protect themselves, and not leave them in shopping carts. Patricia is a healthy senior who loves to garden, but misses her husband, who passed away two years ago. Bill writes from Buffalo to say he and his wife are enjoying The Murdoch Mysteries, and that he might have a thing for a character named Julia, which his wife finds annoying.  Katherine is a retired teacher who wants me to admit I was wrong allowing my son and his fiancee to come to dinner last weekend. OK, Katherine, I was wrong. Also, I bet you were a tough marker, back in the day, and didn’t give extensions.

 

Food continues to be a comfort and a pastime. Moe (a Maureen like me, but she puts an “e” at the end, because she’s clearly a Communist) says she has adopted chomp chomp nom nom lip smack burp as her new mantra. Sharon wants a recipe for lemon biscotti that I promised last week. It’s not mine – It’s Michelle’s, but I will hunt it down and post it below. Here at home, Katherine made homemade pizza for dinner, including a crust made from scratch. It’s all well and good for Kath, who is an athlete and a varsity field hockey player, not to mention 21 years old. The rest of us can’t eat like that. I mean, we can, but how will we greet the brave new world that awaits us if we can’t fit though the door?

 

With that in mind, I’m going to cut this short and do a quick workout. Here’s Michelle’s biscotti recipe, which is easy, but takes a while to make. It’s also made from a cake mix, which some might consider cheating, but that’s not for me to say.  I’m already in trouble with Katherine the retired teacher for my own error in judgement. Just remember to say “Rabbits” tomorrow so we can get ourselves out of this mess.

 

LEMON BISCOTTI

 

I package lemon cake mix

8 tbsps (1 stick) unsalted butter

2 large eggs

1 cup flour

1/2 cup chopped pecans

 

Heat oven to 350 degrees

Line baking sheet with parchment paper

 

Mix all ingredients in large mixing bowl, scraping down the sides, until dough comes together in a ball. With floured hands, shape into a rectangle about 14×4 inches, 1/2 an inch thick. Mound it so it is slightly higher in the centre.

 

Place on baking sheet and bake until firm – 30-35 minutes. Remove from oven and cool for 10 minutes, leaving oven on.

 

Using a serrated knife, slice the rectangle on the diagonal to get 14 1 inch slices. Carefully turn the slices on their sides, and bake another 10 minutes. Turn oven off and leave biscotti for 30-40 minutes more.

 

Remove, and cool completely, bout 2 hours. Enjoy.
